The Founders

Juan Cruz Anon

Born in the vibrant city of Buenos Aires, Argentina, Juan Cruz Anon’s journey into the world of gastronomy and the great outdoors began at an early age, influenced by a strong family tradition. He embarked on a path that led him to become a culinary apprentice, a skilled fisherman, and a passionate hunter. Today, Chef Juan Cruz Anon stands at the forefront of the culinary and outdoor world, where he seamlessly merges his two great passions into a remarkable lifestyle.

With an unwavering commitment to the “FARM TO TABLE” gastronomic trend, Chef Juan has spent the last 38 years dedicated to this philosophy. His culinary prowess is highlighted by his academic achievements, as he graduated with top honors from Le Cordon Bleu in Paris, France, earning the prestigious Grand Diplôme de Cuisine & Pâtisserie.

In addition to his culinary expertise, Juan’s skills as a fly fisherman and hunter have elevated him to professional levels. He is now recognized as one of the world’s finest extreme fly fishermen. His journey began in the golden Dorado-rich waters of Northern Argentina and continued with the pursuit of monstrous trout in the South. Along the way, he had the privilege of crossing paths with some of the industry’s leading Billfish Captains, who became both friends and mentors. Legends like Captain Chris Sheeder, Ron Hamlin, Tred Barta, and many more shared their knowledge, ultimately shaping Chef Juan into the angler he is today. In 2012, he clinched the coveted titles of “TOP OVERALL TAGGING ANGLER OF THE YEAR” and “TOP ANGLER OF THE YEAR FOR PACIFIC SAILFISH” (Worldwide) from The Billfish Foundation, many of those impressive captures achieved with a fly rod.

These remarkable talents have taken Chef Juan Cruz around the globe, from acclaimed three-star Michelin restaurants in Paris to world-tour cruise ships and everything in between. These diverse experiences have not only honed his skills but also allowed him to fish and hunt in breathtaking locations worldwide.

Every year, Chef Juan Cruz returns to his beloved Argentina, where he has pursued game for over four decades. His heart is warmed by the thought of savoring famous asados, exquisite wines, and the thrilling encounters with wildlife that have always fueled his passion. From facing a formidable red stag in the roar to a face-off with a Water Buffalo or a Puma, these pursuits remain at the core of his lifelong journey.

Chef Juan Cruz Anon’s remarkable journey and achievements have not gone unnoticed, and he has been featured in numerous television shows and articles, including “The Best and Worst of Tred Barta,” “The World of Beretta,” “Pescaventura” in Brazil, and “Weekend Magazine” in Argentina. His story is one of dedication to his craft, a deep connection to the great outdoors, and an unyielding passion for the culinary and sporting arts.

The Founders

Franco Nazareno Placenti

Son of the renowned professional hunter and hunting operator Daniel Alberto Placenti, who was one of the pioneers in the development of hunting activity in Argentina at the beginning of the 90s.

Lover of good food and wine, I describe myself as an excellent regional cook, a specialist in Creole barbecues as well as in the preparation of wild meats from the field directly to the table.

Hunter, athlete, born and raised in the heart of Argentina, older brother and belonging to a family dedicated to hunting all his life, surrounded by an unbeatable environment in the wild Pampa, at a very early age I showed signs of unconditional love for nature, hunting and wildlife.

At barely 10 years old and with my air rifle, I was already taking my first steps after the turtledoves, motivated by the excitement and adrenaline that every hunter perceives when stalking prey. Deep inside I was clear that the livelihood of my life would depend on this activity. In the not too distant future.

When I was just 15 years old, I received from my family some of the best gifts I could have hoped for (My first rifle)… New, just taken out of the box, a Mauser 308 (7.62) with which an unforgettable facet in my life would soon begin.

Life, wild boars, deer and other species were the link that forged my unconditional love for hunting in my beginnings and which maintained my passion season after season.

As a professional hunter, I have been fortunate enough to visit different hunting destinations around the world. At a very young age, barely 18 years old, I was able to make the long-dreamed-of hunting trip to the African continent, a must-see destination for every hunter.

As a hunting guide I had the privilege of accompanying both national and foreign hunters, in their long-awaited quest to fulfill their dream in our lands, also being a fundamental pillar for companies of international prestige such as El Corte Inglés in Spain through its representative of international hunting Francisco Barroso who repeatedly visited our lands.

As the years go by and the arrival of hunters from all over the world year after year, I developed an innate sense in the management, development and execution of hunting safaris both within Argentina and in the rest of the world.

Today, with more than two decades of being part of this great activity, we continue to learn and undertake continuously.

Understanding hunting as a way of life, currently based in Madrid, Spain, participating in numerous hunts as a hunter and organic, but clinging to my Argentine roots where year after year I return to carry out the different seasons as a family with my sights always set on expanding our hunting horizons.
